Autumnal Veggie Beef Stew

1-1/2 lb. beef, cut into 1” cubes

2 slices of bacon, diced

1 C onions, chopped

7 potatoes, diced

2 carrots, sliced

2 celery stalks, sliced

 1 bay leaf (optional)

2 C beef broth

1 C apple cider

¼ t pepper

2 T flour

2 T water

1 T fresh parsley

Layer beef, bacon, and all vegetables in a slow cooker. Combine beef broth, apple cider, and pepper and pour over vegetables. Cover and cook for 7 to 9 hours on LOW. When cooked, combine flour, cold water, and parsley to form a smooth mixture. Stir into the beef mixture, turn cooker to HIGH, and continue cooking for 15 minutes longer. Delicious!
NOTE: to enhance the apple flavor,  seed, peel, and dice 1 apple and add with vegetables. And for additional variety, you could add cut up beans, chopped cabbage, even corn kernels.
